strawberry ice cream
melts oh so very quickly
on hot summer days
\*\*\*\*\*
However...
there never seems to be a problem
in eating it before it melts!

### EASY STRAWBERRY ICE CREAM
Here is another of my favorite strawberry recipes for summer!
You do need a high powered blender for this one. I use my Vitamix. It is best eaten right away. Leftovers can be put in the freezer, but they will freeze rock hard. After that, some defrosting is necessary before eating and it won't be as perfect as when first made, but still good!
You can also use other frozen fruit. But I keep coming back to the strawberries.

**Easy Strawberry Ice Cream**
by Lea Goode-Harris
Serves 4 to 6 people
Ingredients:
Please use organic! Especially your strawberries, no exceptions as they are the most susceptible of all fruits to pesticides and inorganic fertilizers.
1 pound frozen organic strawberries
1 Cup yogurt (if you can't tolerate dairy, use any alternative yogurt product that you like)
1 Tbls maple syrup (adjust this amount more or less to your liking)
1 tsp vanilla extract
1 favorite memory of summer
**Directions:**
Place all ingredients into your high powered blender, including your memory of summer.
Start at a low speed, using the plunger to keep the ingredients submerged and close to the blades.
Gradually increase the speed until completed blended.
Scoop into individual bowls and...
Enjoy!
