What better way to celebrate the Summer Solstice
and longest day of the year than
by eating strawberries?
Fresh off the plant and warmed by the sun,
bursting with the flavor of summer
is my favorite.
My next favorite is a strawberry dessert/pudding that is new to me,
made for me recently on my last night in England,
by dear friends Kimberly and Jeff Saward.
Brits call all their desserts- puddings!
(this is not the American version of a pudding!)

### ETON MESS
"[Eton Mess is a traditional English dessert](https://en.wikipedia.org/wiki/Eton_mess) consisting of a mixture of strawberries, broken meringue, and whipped double cream. First mentioned in print in 1893, it is commonly believed to originate from Eton College and is served at the annual cricket match against the pupils of Harrow School."

Serves 4 to 6 people
Ingredients: (all approximations)
Please use organic! Especially your strawberries, no exceptions as they are the most susceptible of all fruits to pesticides and inorganic fertilizers.
1 1/2 to 2 1/2-cups of halved and quartered strawberries (save a few to top the bowl or individual portions)
1-pint whipping cream (whipped with 2-4 Tbls powdered sugar and 1 tsp vanilla extract)
6-meringue shells-broken into pieces ( or 20-meringue cookies, also broken, or make your own if you can't find them in the store, which I had to do and would do again as I love this recipe so much!)

Directions:
Whip the whipping cream, fold in the strawberries, meringue pieces, a favorite travel memory and top with a few strawberries.
